Salami by Rachel Zoe

One of my favorite blond balaboostas who lives in sunny Miami with her beautiful young family called me just before sundown on Friday.   She assumed I watched the Rachel Zoe Show and wanted to know Rachel’s grandma’s recipe for salami.  I don’t watch the show but I do get The Zoe Report on covetable fashion and beauty loot. Somehow,  Rachel’s luxe bohemian style and stinky cured meat are the last two indulgences I would expect to pair together. My friend described a  salami smothered in jam and I was intrigued.

  A few clicks later and it turns out that Rachel Zoe’s grandma does a stylish salami!  What a great way to dress up a classic Hebrew National at your next cocktail party.

Large Soft Salami (ie. Hebrew National)
1 Cup Apricot Preserves
1/2 Cup Honey Mustard
Preheat Oven to 350 degrees F.
In a bowl, mix together the apricot preserves and honey mustard. Slice the salami 75% through without cutting slices off. Place the salami on foil and rub the marinade into all the crevices. Wrap and cover the salami and place on a glass baking dish. Bake for 35-45 minutes.
